Truffles

Truffle is the fruiting body of an underground mushroom. The original chocolate truffle, a French invention (1920s) was a ball of ganache, chocolate and creamy, flavored and rolled in cocoa. It was named after the precious black truffle fungus because of its physical resemblance. Today, the term truffle is often used to in America to describe any filled chocolate.

Merenguitos

Mini size meringue puffs. They are so nice, soft inside...looks like snowflakes. It's made only with sugar and real white eggs.

Brownies

Brownies are America's favorite bar cookie (square). It's hard to believe that they began their life in a Sears, Roebuck and Co. catalog over 100 years ago (1897). Brownies are so named because of their dark brown color. They are often classified as fudgy or cakey.

Desserts Bars

Desserts Bars, Squares or rectangles are a type of american "bar cookie" or "treats" that has the texture of a firm cake or softer than usual cookie.

Profiteroles

Sweet profiteroles are small, crisp, hollow rounds of choux pastry that are filled with sweet whipped cream or pastry cream. They can be dust with sugar powder or chocolate glaze. The word "Profiteroles" is believed to be derived from profit, which means "small gift" or "small gain".

Key Lime Pies

Key lime Pie, is similar to a lemon Pie, only instead of using lemons it is made with key limes. Key limes are so much smaller than a regular Persian lime. Those small version are very tasty. The filling contains sweetened condensed milk and the crust can be mini tarts or mini pastry shells. Mini pies are great because everyone can have their own.

Mini Pies

Cornmeal crust dough, two-crust mini pie filled with real fruit enclosed in the pastry shell.

 

Mini Tarts

 

The classic tart is made of a sweet pastry crust, a luscious pastry cream, and glistening fresh fruit. The sweet pastry crust is homemade filled with curds or pastry cream, and can be garsnish with fruit or merengue for the lemon tart.

 

Chocolate Marquise

 

Is a chocolate dessert made with a rich cream (dark chocolate, butter, sugar, cocoa powder, egg and cream) alternating layers of Maria cookies.

 

Macarons

Is a sweet meringue-based confection made with eggs, sugar and almond powder, filled with ganache, buttercream or jam. The name is derived from the Italian word macaroni, both mean "fine dough". The Macaron cookie was born in Italy, which was a simple cookie. At the begining of the 20th century, the macaron become a "double-decker". Laduree pastry in Paris, had the idea to fill them with chocolate ganache and to stick them together.

Alfajores

Alfajores in South America are a sweet sandwich cookie featuring a layer of dulce de leche in the middle of two sweet biscuits and coated with chocolate o sprinkled with powder sugar.

Mousse

A mousse is a prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques. Dessert mousses are typically made with whipped egg white or whipped cream, and generally flavored with chocolate or puréed fruit.

Mini Cheesecakes

Traditional mini New York Cheesecakes, graham crust cracker or chocolate crust cracker. Those mini cheesecakes are very smooth and rich in flavor. It can be topped with any fruit mirror, ganache or sour cream. 

Trifle Cups

Trifle is an English desser dish made from thick (or often solidified) custard, fruit, sponge cake (often soaked in syrup), fruit juice or jelly, and whipped cream. These ingredients are usually arranged in layers.

Milk Flan Custard with Caramel

In spanish-speaking countries and North America, flan refers to creme caramel. Crème caramel is a variant of plain custard (crème) where sugar syrup cooked to caramel stage is poured into the mold before adding the custard base. It is usually cooked in a bain-marie on a stove top or in the oven in a water bath. It is turned and served with the caramel sauce on top. Our main ingredients are condensed milk, whole milk, eggs and sugar caramelized on top. This is so good, rich, and delicious.
